Cabbage is one of the oldest known vegetable. China is the largest world producer of cabbage.
Here is a recipe for slow coked one pot dish, very easy on preparation and very hearty meal on table.

1 cabbage (approx. 1.5 kg), cut into large portions
1kg smoked ribs, sliced
1 tomato, chopped
1 tsp tomato paste
1 green capsicum, chopped
5 black peppercorns
5-6 caraway seeds
1 tsp red pepper
1-2 bay leaves
½ cup vegetable oil
1/2 tsp salt, if a fresh meat is used instead of smoked ribs
In a heavy based large pot, layer first the cabbage, next the ribs, then capsicum, tomatoes and spices. Repeat layering until all vegetables and ribs are finished. Pour the oil and water over. Cover the pot and let it simmer on a low heat for 2-2.5 hours. By then the cabbage should be tender and the meat should fall of the bones. During the cooking time, press gently the vegetables to be submerged in the liquid once or twice with a wooden spoon. If needed add extra 1 or 2 cups of hot water if it evaporates or vegetables are not submerged in juiced.
